Now, onto the cheeses....

Milawa Blue comes from an Aussie owned line of creamy cheeses made from sustainable, traditional methods and contains hints of blue that packs a pleasant aftertaste. It’s the type of blue that won’t scare off the typical cheese novice, and goes well with most Sauvignon Blancs, Dry Rieslings or smooth Italian whites. It you prefer your reds, pair this cheese with a Rosé or light Pinot Noir.

The Fromagerie Germain Triple Crème is the most decadent of all cheeses. The renowned cheese making company based in Chalancey, France adds cream to this ripened cow’s cheese in order to make it even creamier. It has a smooth butter-like texture, and because the rind is made with geotrichum, it leaves this cheese less bitter and velvetier. We recommend pairing this cheese with an oaked Chardonnay, or if you want to posh things up a little, go a white Burgundy! Your other safe bets are a Champagne or Chardonnay-based Sparkling Wine.

Binnorie Dairy Triple Cream Brie is made in the Hunter Valley with fresh milk from local herds. Set right in the middle of the Hunter Valley's fabulous Pokolbin vineyard district, Binnorie Dairy produces a range of cheeses with distinctive characters unavailable outside the region! The Triple Brie is a mild, buttery white-mould surfaced-ripened cows milk cheese, which generally pairs best with white wines and Chardonnay. Let it rest at room temperature for at least 30 minutes before you dive in, this cheese is a winner.

Maffra Cheese Co is located in the heart of Gippland’s dairying country and enjoys a reputation for producing some of Australia’s best cheddars. Their cheeses give a nod to the old ways of cheese making techniques, using mostly handcrafted processes with very little machinery. The result being a very tasty cheese and a bunch of awards including gold medals at domestic competitions. You can pair this cheddar with a Cab Sav or Port, an oaky Chardonnay, heavy Larger or medium-strong dry Cider.
